Zucchini Casserole
It’s zucchini season!
Ingredients
1 quart fresh zucchini, sliced
1 cup chopped onion
1 tsp salt
1 pound ground beef
2 cups cooked rice
2 cups marinara sauce (or tomato sauce of choice, add more if desired)
2 cups cottage cheese
1 egg beaten
1 cup grated cheese
Instructions
Preheat oven to 350 degrees.
Cook squash in salted water for 2-3 minutes. Drain.
Saute beef and onion until cooked. Add rice and marinara sauce.
Blend the cottage cheese and egg.
Put half the squash slices in the bottom of a 9x13 pan. Spoon in beef and rice mixture. Add the cottage cheese mixture. Add the remaining zucchini slices. Top with grated cheese.
Bake in preheated oven for 20-25 minutes or until bubbly.
