Zucchini Casserole
It’s zucchini season!
Ingredients
- 1 quart fresh zucchini, sliced 
- 1 cup chopped onion 
- 1 tsp salt 
- 1 pound ground beef 
- 2 cups cooked rice 
- 2 cups marinara sauce (or tomato sauce of choice, add more if desired) 
- 2 cups cottage cheese 
- 1 egg beaten 
- 1 cup grated cheese 
Instructions
- Preheat oven to 350 degrees. 
- Cook squash in salted water for 2-3 minutes. Drain. 
- Saute beef and onion until cooked. Add rice and marinara sauce. 
- Blend the cottage cheese and egg. 
- Put half the squash slices in the bottom of a 9x13 pan. Spoon in beef and rice mixture. Add the cottage cheese mixture. Add the remaining zucchini slices. Top with grated cheese. 
- Bake in preheated oven for 20-25 minutes or until bubbly.
