Zucchini Casserole

It’s zucchini season!

Ingredients

  • 1 quart fresh zucchini, sliced

  • 1 cup chopped onion

  • 1 tsp salt

  • 1 pound ground beef

  • 2 cups cooked rice

  • 2 cups marinara sauce (or tomato sauce of choice, add more if desired)

  • 2 cups cottage cheese

  • 1 egg beaten

  • 1 cup grated cheese

Instructions

  • Preheat oven to 350 degrees.

  • Cook squash in salted water for 2-3 minutes. Drain.

  • Saute beef and onion until cooked. Add rice and marinara sauce.

  • Blend the cottage cheese and egg.

  • Put half the squash slices in the bottom of a 9x13 pan. Spoon in beef and rice mixture. Add the cottage cheese mixture. Add the remaining zucchini slices. Top with grated cheese.

  • Bake in preheated oven for 20-25 minutes or until bubbly.
